Chicken & Rice w/Street Corn

Serving size: 3-4

Ingredients: 2 chicken breast, 1 cup rice, 1&1/4 cup water, 1 cup corn(husk or can) 1/2 cup black beans, 1/2 red onion, 1 lime, 1 teaspoon of the following: garlic powder, onion powder, chili powder, cayenne pepper, oregano, salt and pepper. 1 tablespoon Knorr Chicken Bouillon, Olive oil.

Instructions: Cut up chicken breasts into cube sizes. In a bowl mix the chicken with the teaspoons of garlic powder, onion powder, chili powder, cayenne pepper, oregano, salt and pepper until chicken is fully covered, set to side. In a small sauce pan add about 1 teaspoon of olive oil on medium high heat. Add 1 cup of rice and stir occasionally until rice is lightly toasted(about 3-4 min) then add 1&1/4 cup of water, salt and knorr chicken bouillon, stir and bring to a boil. Once boiling turn heat down to a simmer(low) cover sauce pan and cook for 10 minutes. In a pan add about 1 tablespoon of olive oil on medium high heat and cook chicken breast(about 7-10 minutes.) Remove chicken. In same pan add 1/2 diced onion and cook until fragrant(1 minute) then add corn and cook for about 6 minutes. Add black beans, the juice of 1 lime and cook additional 4 minutes. Plate rice, chicken, corn.
